Cheese, Bacon, Spinach and Egg Bake

“This is an excellent, filling breakfast or snack - great to make in advance, and can also be frozen and reheated”

INGREDIENTS

  • 4 Free-range Eggs

  • 3/4 Tsp Salt

  • 1/2 Tsp Pepper

  • 280 g Chopped Spinach

  • 450 g Cottage Cheese

  • 1 Onion - chopped

  • 1 C Grated Cheese

  • 1/4 C Gluten Free Flour

  • 3 Tbs Chopped Fresh Dill (or 1 Tsp Dried Dill)

  • 80 g Cooked and Diced Bacon

METHOD

  1. Preheat oven to 175 degrees fan bake

  2. Spray a 20 cm baking dish with olive oil spray

  3. Beat eggs, salt and pepper in a large bowl

  4. Stir in the spinach, bacon, cottage cheese, onions, grated cheese, flour and dill and mix to combine

  5. Pour mixture into prepared dish

  6. Bake at 175 degrees until the center is firm and the top is golden (approximately 45-minutes) then allow to cool for 10-minutes before cutting and serving, or freezing
