Smashed Avocado on Gluten Free Toast

“This smashed avo is great just on toast, or served with a side of salmon, bacon or eggs”

INGREDIENTS
1/2 Avocado
1/2 Tsp Pesto
Pinch of Salt and Pepper
1/2 Tsp Lemon Juice
1 - 2 Slices of Gluten Free or Wholemeal Bread (my wife and I love this Gluten Freedom Black Rice and Polenta Sourdough Bread)
Micro Greens or Parsley
Optional: Poached eggs and/or bacon or salmon
METHOD
Mash avocado with a fork and mix in pesto, salt and pepper and lemon juice
Lightly toast your gluten free or wholemeal bread
- If you are opting to serve with sides such as bacon, salmon or poached eggs you should prepare these now also
Spoon the avocado mixture evenly on your toast and top with micro greens or parsley plus dish up any sides you might be adding
