Cheesy Mango Chicken

INGREDIENTS
½ Tsp Mixed Herbs
½ Tsp Paprika
½ Tsp Garlic Powder
Salt/Pepper
2 Medium Chicken Breasts
4 Mango Slices (canned mango is fine)
½ Cup Edam Cheese
¼ Cup Parmesan Cheese
1/4 Diced Red Onion
Chopped Parsley to Garnish
METHOD
Preheat oven to 180 C fan bake.
Combine mixed herbs, paprika, garlic powder, salt and pepper in a small bowl.
Cover both chicken breasts with all of the seasoning.
Heat a pan over a medium heat, add oil, place both chicken breasts top side down and cook for 3-4 minutes. Flip the chicken breasts over and brown, then remove pan from heat.
Top the chicken breasts with half the Edam cheese, layer 2 mango slices on each chicken breast, add remaining Edam cheese, followed by red onion and then the Parmesan cheese.
Place pan with the breasts in the oven for 8-10 minutes, or until cooked through. Garnish with freshly chopped parsley.
Serve with roast vegetables and/or salad.
