Chocolate Protein Hemp Brownies

INGREDIENTS

  • 1 Linseed Egg (2 Tbsp ground linseed, 3 Tbsp water, mix and let set for 15 mins)

  • 1 C Plain Flour

  • 1 ¼ C Almond meal

  • ½ C Cocoa Powder

  • 1/4 Tsp Salt

  • 1 Tsp Baking Soda

  • 4 Tbsp Hemp Seeds

  • 100 g 70% or Higher Dark Chocolate

  • ¼ C Coconut Oil

  • 1 C Coconut Sugar

  • 1/3 C Hemp milk, Almond milk, Cashew milk or Coconut milk

  • 1 Tsp Vanilla Extract

METHOD

  1. Preheat oven to 180 c fan bake

  2. In a large bowl combine flour, almond meal, cocoa, protein powder, salt, baking soda and hemp seeds

  3. In a bain-marie (aka bowl over hot water) melt the dark chocolate and coconut oil and mix together until silky; set aside

  4. In a separate bowl combine the coconut sugar, milk and vanilla extract, followed by whisking in the melted dark chocolate and coconut oil

  5. Combine the two bowls together (wet and dry ingredients), mix until fully combined and a thick batter

  6. Line a medium rectangular baking tin with baking paper; evenly spread brownie mixture throughout the tin and place in the centre rack of the oven for 25 minutes

  7. After 25 minutes remove from the oven and let cool for at least 4 hours before cutting
