Garlic and Greens Chicken

“A super quick and easy option for weeknight dinners.”

 

Servings: 4

INGREDIENTS

  • 500 g Chicken Breast, cut into small cubes

  • 2 Tbs Olive Oil

  • 1 Tsp Mixed Herbs

  • Salt and Pepper, to taste

  • 3 - 4 Tsp Garlic, minced

  • 1/2 C Tomatoes, chopped

  • 2 C Broccoli Florets

  • 2 C Baby Spinach

  • 1/2 C Shredded Cheese

  • 115 g Cream Cheese

METHOD

  1. Heat olive oil in a large pan over medium heat

  2. Season the chicken with mixed herbs, salt and pepper, then add to pan and cook until the chicken is golden and cooked through

  3. Add the garlic to the pan; saute with the chicken for a minute or two

  4. Toss in the tomatoes, broccoli, spinach, shredded cheese and cream cheese. Cook for another 3 - 4 minutes, or until the broccoli is cooked

  5. Great on its own, or serve with rice or pasta if you want a carb-based meal, or cauliflower rice for a low-carb option
