Breakfast Burrito

“Best way to start the day.”

 

Servings: 1

INGREDIENTS

  • Olive Oil or Coconut Oil

  • 2 - 3 Free-Range Eggs, whisked

  • Bacon, Ham or Chicken

  • 2 Mushrooms, sliced

  • Handful of Baby Spinach

  • 1 Wholegrain or Spinach Based Tortilla

  • Salt and Pepper, to season

  • Optional: Aioli, or Grated Cheese

METHOD

  1. Heat the oil and cook the bacon, ham or chicken on one side of the pan

  2. On the other side cook the sliced mushrooms

  3. Heat the tortilla in the microwave for 15 seconds

  4. Empty the pan, scraping out any excess off the bottom of the pain

  5. Add a fresh dash of olive oil to the pain and scramble the eggs; season with salt and pepper

  6. Place the cooked eggs in the centre of the tortilla, and layer with the rest of the ingredients, and aioli and/or cheese, if using

  7. Optional: Grill the burrito in a clean non-stick pan with no oil or butter, until brown on both sides. If you’re using cheese place a small amount on the flap of the burrito and place down first to prevent the burrito from unraveling
