Mediterranean Basil Pesto Smoked Salmon on Cedar Wood

This one calls for a BBQ.

 

INGREDIENTS

METHOD

  1. Run cold water over the cedar wood slab

  2. Place salmon fillet on the wood and coat with dip; fridge for at least 20 minutes

  3. Turn on BBQ to a medium heat, close the lid and let heat for 3 - 5 minutes. Place the wood in the centre of the grill plates and close the lid

  4. Let the salmon cook for 20 - 25 minutes, checking at 12 minutes to ensure wood is not burning too much. If it starts to burn or is on fire, use a spray bottle with water to cool it down

  5. Serve off the wood slab
