Quick and Easy Stir-fry

INGREDIENTS
1 tsp Coconut Oil (or Olive Oil)
3 Mushrooms, sliced
100 – 150 g Jasmine Rice
75g Chicken Free Chicken (or Chicken, Beef or Prawns if you prefer)
Season with herbs if you’d like (e.g. Cajun herbs, mixed herbs etc.)
2 – 3 Tbsp Coconut Amino Seasoning
Pinch of Himalayan Pink Salt
Large Handful of Spinach
METHOD
Precook rice and meat, set aside
Fry mushrooms in a pan with the coconut (or olive) oil until softened
Add rice, coconut amino’s and salt. Combine and fry for 60 seconds
Turn element off and fold in the spinach
Plate the rice mixture, and then top it with the Chicken Free Chicken (or your choice of meat) and serve
Note this recipe can be doubled or quadrupled and refrigerated for up to 3 days, or frozen up to 3 months.
