Lasanga Stuffed Kumara

“Here’s a cleaner way to enjoy lasanga!”

 

Servings: 4

INGREDIENTS - KUMARA BASE

  • 4 x Medium Sized Kumara - washed but not peeled

  • 1 C Chopped Spinach

  • 160 g Grated Cheese

  • Steamed Vegetables - e.g. brocolli, carrots or beans

INGREDIENTS - SAVOURY MINCE

  • 1.5 Tsp Coconut Oil

  • 1 Tsp Minced Garlic

  • 1 Diced Onion

  • 1 Diced Carrot

  • 2 Tbs Mixed Herbs

  • 1/2 Tsp Chili Powder (optional)

  • 1 Kg Minced Beef

  • 1 Tin Organic Diced Tomatoes (these can also be flavoured variations - e.g. Mexican or Italian style, depending what you are using the mince for)

  • 90 g Tomato Paste

  • Large Handful of Baby Leaf Spinach

  • Salt and Pepper to Taste

METHOD

  1. Preheat oven to 180 degrees fan bake

  2. Bake kumara until soft - approximately 45 minutes - then allow to cool for approximately 10 minutes

  3. Whilst kumara is cooking, make your savoury mince mixture

  4. Once kumara is cooked, cut each one in half length ways and scoop out the flesh

  5. Scoop the mince mixture into the skin until it is full and slightly overflowing

  6. Top the kumara with the chopped spinach and grated cheese, then bake for a further 12 - 15 minutes until golden

  7. Whilst the kumara’s are double baking, steam your vegetable side

  8. Plate up and enjoy!
