Spicy Grilled Cauliflower Bowl

Servings: 2

INGREDIENTS

Cauliflower

  • 1 C Cauliflower

  • 1/2 Tbs Olive Oil

  • 1/2 Tsp Turmeric Powder

  • 1/2 Tsp Cumin Powder

  • 1/2 Tsp Chilli Powder

  • 1/2 Tsp Minced Garlic

  • 1/2 Tsp Lime Juice

  • Salt

Salad

  • 1/2 Cucumber

  • 1/2 Small Red Onion

  • 1/2 Tomato

  • 1/4 C Diced Capsicum

  • 1/2 Tbs Olive Oil

  • 1/2 Tbs Lime Juice

Mint Coriander Oil Dressing

  • 1 Tbs Coriander, finely chopped

  • 1 Tbs Mint Leaves, finely chopped

  • 2 - 3 Tbs Olive Oil

  • 1/2 Tsp Coconut Sugar

  • Salt and Pepper, to taste

Grains

  • 1/2 C of your preferred grain (e.g. rice, quinoa etc.) cooked and cooled

METHOD

  1. Combine all dressing ingredients in a mixing bowl; whisk lightly and set aside

  2. Combine all the cauliflower ingredients, minus the cauliflower, in a medium bowl until well combined

  3. Add the cauliflower in and toss until fully coated, then set aside for at least 30 minutes

  4. Lay on a baking sheet and grill in the oven for 10 - 15 minutes until cauliflower is cooked through

  5. Whilst the cauliflower is cooking, make your salad by dicing the vegetables and combining them in a bowl with the other salad ingredients

  6. Spoon your grains into a bowl and then pour coriander oil over it. Next place the cauliflower and salad over the rice and enjoy
