Zoodle Bolognese

“Low on carbs, high on nutritional punch.”

 

Servings: 3

INGREDIENTS

  • 1 Tbs Olive Oil

  • 2 Tsp Garlic, minced

  • 1 Onion, diced

  • 1 Red Capsicum, seeded and diced

  • 8 Mushrooms, sliced

  • 1 Tsp Dried Oregano

  • 500 g Beef Mince

  • 3 Zucchini, spiralised

  • 1 Jar of Bolognese Sauce

  • Fresh Basil, chopped

  • Grated cheese, to sprinkle

METHOD

  1. Heat olive oil in fry pan

  2. Add garlic, onion, capsicum, mushroom and dried oregano into the pan; lightly saute until onion is translucent and mushrooms have softened

  3. Remove vegetable mix from pan and cook mince until browned and cooked through

  4. Remove mince from pan

  5. Add zoodles to pan and cook gently over low heat for 1 - 2 minutes

  6. Add all ingredients back into the pan, as well as the sauce, and combine

  7. Stir in chopped fresh basil

  8. Let simmer for 2 minutes on low heat

  9. Serve into bowls, top with grated cheese and enjoy
